This delicious and nutritious bread is not only Gluten and Sugar free, but completely Grain free as well, which is great for those of us who need to limit our starch intake. It’s fairly simple to prepare, with no kneading required. This is my alltime favorite alternative to bread that absolutely satisfies that craving for a warm slice of toast with butter. I don’t even miss bread when I have a loaf of this around!
Makes One Loaf
INGREDIENTS:
2 cups Garbanzo Brean Flour (or Chickpea Flour)
1 cup Almond Flour
1/4 cup Monk Fruit sugar
4 tsp aluminum free Baking Powder
1 tsp Chia seed gel (2 parts hot water, 1 part chia seeds)
1/2 tsp Salt
4 Eggs
1 cup organic Chicken or Vegetable Broth
1 cup Water
1/2 cup Melted Butter
1/2 cup Fresh Chopped Onion
DIRECTIONS:
PREHEAT OVEN TO 375. LINE 4 1/2 x 8″ LOAF PAN WITH PARCHMENT PAPER AND LIGHTLY COAT WITH COCONUT OIL.
IN MEDIUM BOWL, ADD FLOURS, MONK FRUIT SUGAR, BAKING POWDER, CHIA SEED GEL, AND SALT AND MIX WELL.
IN LARGE BOWL, WHISK TOGETHER EGGS, BROTH, WATER AND BUTTER. STIR IN THE ONION. ADD FLOUR MIXTURE.
STIR WITH LARGE SPOON FOR 1-2 MINUTES (OR USE ELECTRIC MIXER WITH PADDLE ATTACHMENT) TO MAKE A THICK, STICKY BATTER.
POUR MIXTURE INTO PREPARED PAN AND BAKE FOR 40 MINUTES, THEN ROTATE AND BAKE FOR ABOUT ANOTHER 40 MINUTES UNTIL GOLDEN BROWN, SPRINGY TO THE TOUCH AND TOOTHPICK PLACED INTO CENTER OF LOAF COMES OUT CLEAN.
LET COOL IN PAN FOR 5 MINUTES AND THEN PLACE ON WIRE RACK TO COOL FOR ANOTHER 15 MINUTES BEFORE SLICING AND SERVING.
