Here’s a tasty snack that is a fun way to get more legumes into your diet. Chickpeas, also known as Garbanzo Beans, are loaded with vitamins, minerals, protein and fiber. They can be helpful in managing your weight and controlling blood sugar levels. They may even be beneficial in preventing heart disease, cancer and diabetes. Plus they are affordable and easy to find. This is one of my go-to snacks to keep me away from the chips! I think you’ll enjoy this treat as much as I do.
Ingredients:
1 (15-ounce) can low-sodium chickpeas, drained and rinsed
2 tablespoons (30 ml) cooking oil
2 teaspoons (10 ml) any combination of spices of your choice (suggestions: black pepper, chili powder, garlic powder, lime or lemon zest, onion powder, paprika)
1/4 teaspoon (1.25 ml) salt
Directions
Preheat the oven to 400°F. Pour the chickpeas over paper towels and dry as best as you can. In a medium-sized bowl, mix the chickpeas with oil, spices and salt. Bake for 30–45 minutes or longer – stirring every 15 minutes – until chickpeas are crispy.
