Here’s a yummy, nutritious snack bar that’s a great pick-me-up for the afternoon energy crash. Easy to carry along for a healthy alternative to the usual on the go junk food snack options.
Ingredients:
1 cup chopped almonds
1/2 cup raw quinoa
1/4 cup pumpkin seeds
1 cup dried cherries (dried cranberries will also work well)
2 tablespoons brown rice syrup (can substitute with honey or aguave syrup)
sea salt
Directions:
Spread almonds, quinoa, pumpkin seeds onto a cookie sheet and toast for 10-20 minutes until lightly golden browned.
Place cherries, syrup and salt into a food processor to puree.
Stir in the nut mixture.
Press mixture evenly into a square baking pan lined with parchment paper.
Bake at 350 for 20-25 minutes. Do not overbake.
Cool and then cut into bars.
