This nutritous vegan dish is one of my favorites! It’s just the way I like them – quick, simple and delicious. It can be prepared in just 15 minutes with only 15-20 cooking time. You can also easily adapt it to a chicken dish by replacing the tofu with chicken, which is equally yummy.
Ingredients:
1 block firm tofu, drained
1 tablespoon oil
2 teaspoons minced fresh ginger
2-3 cloves garlic, minced
1/2 cup finely chopped onion
2 teaspoons dried basil
1/8 teaspoon cayenne pepper
1/2 cup organic low-sodium vegetable or chicken broth
1 (11 oz) can mandarin oranges
1 teaspoon arrowroot powder (for thickening)
Directions:
Rinse tofu and pat dry. Cut into approximately 1/4″ slices or into small chunks.
Heat oil in large skillet. Add ginger, garlic and onion. Stir over medium heat for 2-3 minutes.
Add tofu and pan sear until lightly browned; about 3 minutes per side. Remove tofu from pan and keep warm.
Add the chicken broth, spices and mandarin oranges with the liquid into the skillet and cook for 4-6 minutes.
Add the snow peas or other veggies if desired.
Add arrowroot powder, if needed, to thicken and blend well, stirring until thick and bubbly.
Stir in tofu and cook until heated through.
Serve over whole grain rice or quinoa, if desired.
